Ingredients

    • 1 cup all-purpose flour
    • ½ cup whole wheat flour
    • 1½ cup cornmeal
    • ½ tsp ground cinnamon
    • ¼ tsp salt
    • 2 tsp baking powder
    • ½ cup maple syrup
    • 1-2 Tbsp olive oil
    • 1½ cup unsweetened soy milk
    • 2 Tbsp lemon juice
    • 2 eggs
    • 2 McIntosh apples, peeled and diced into ¼ in. chunks

    Directions

      1. Preheat oven to 400º F.
      2. Add dry ingredients to a bowl and mix.
      3. In a separate mixing bowl, beat together maple syrup, olive oil, soy milk, lemon juice, and eggs until combined.

      8. Bake for 25-30 minutes until a toothpick inserted in the center comes out clean.
      9. Let cool for a few minutes, then slice into 12-16 slices. Best served warm with a pat of butter and a drizzle of maple syrup.
